Vegan Tofu Scallion Cream Cheese

Ingredients
  

Base:

  • 8 ounces Firm tofu drained and pressed
  • 4 Scallions chopped

Flavor Additions:

  • 2 tbs Chives fresh, chopped
  • 1 tbs Fresh lemon juice
  • 1 tbs White miso paste
  • 1 tbs Nutritional yeast

Spices:

  • ½ tsp Garlic powder
  • ½ tsp Onion powder
  • Salt and Pepper to taste

Instructions
 

Prepare the Tofu Base:

  • In a blender or food processor, combine the firm tofu, fresh lemon juice, white miso paste, nutritional yeast, garlic powder, and onion powder. Blend until smooth and creamy.

Incorporate the Herbs:

  • Transfer the blended mixture to a mixing bowl. Add the chopped scallions and fresh chives. Stir well to combine.

Season the Cream Cheese:

  • Add salt and pepper to taste. Mix thoroughly to ensure even seasoning.

Chill and Serve:

  • Refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled as a spread on bagels, crackers, or as a dip for fresh vegetables.
