Caramelized Onions: A Kitchen Essential

Ingredients:

  • Gluten-free bread, 2 slices

  • Vegan butter or margarine, 2 tbsp

  • Vegan cheddar cheese slices, 4

  • Sliced pickles (dill or bread and butter), 1/4 cup

  • Salt, to taste

  • Pepper, to taste

  • Sandwich press(optional)

Instructions:

  1. Heat a cast iron skillet over medium heat on the stove.

  2. Spread vegan butter or margarine on one side of each slice of bread.

  3. Place 2 slices of bread, butter side down, on the skillet.

  4. Top each slice of bread with 1/4 cup vegan cheddar cheese shreds and 2 tbsp of sliced pickles.

  5. Season with salt and pepper to taste.

  6. Place the remaining slices of bread on top, butter side up.

  7. Use a sandwich press to press down on the sandwich and flatten it.

  8. Cover the skillet with a lid or aluminum foil to help the cheese melt.

  9. Cook for 3-4 minutes or until the bread is golden brown and the cheese is melted.

  10. Carefully flip the sandwich over using a spatula and cook for an additional 2-3 minutes.

  11. Remove from heat and let cool for a minute before serving.
