Ingredients:

Gluten-free bread, 2 slices

Vegan butter or margarine, 2 tbsp

Vegan cheddar cheese slices, 4

Sliced pickles (dill or bread and butter), 1/4 cup

Salt, to taste

Pepper, to taste

Sandwich press(optional)
Instructions:

Heat a cast iron skillet over medium heat on the stove.

Spread vegan butter or margarine on one side of each slice of bread.

Place 2 slices of bread, butter side down, on the skillet.

Top each slice of bread with 1/4 cup vegan cheddar cheese shreds and 2 tbsp of sliced pickles.

Season with salt and pepper to taste.

Place the remaining slices of bread on top, butter side up.

Use a sandwich press to press down on the sandwich and flatten it.

Cover the skillet with a lid or aluminum foil to help the cheese melt.

Cook for 3-4 minutes or until the bread is golden brown and the cheese is melted.

Carefully flip the sandwich over using a spatula and cook for an additional 2-3 minutes.

Remove from heat and let cool for a minute before serving.
