Buffalo Smashed Potatoes

Ingredients
- 2 lbs Baby Potatoes
- 3 tablespoons Olive Oil
- Salt and Pepper to taste
- ¼ cup Buffalo Sauce
- 2 tablespoons Fresh Chives chopped
- 2 tablespoons Scallions chopped
- 1 tablespoon Fresh Herbs such as thyme or parsley, chopped
- ¼ cup Blue Cheese crumbled, or Ranch Dressing for dipping
Instructions
Preheat the Oven:
- Preheat your oven to 450°F (230°C).
- Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
Boil the Potatoes:
- Place 2 lbs of baby potatoes in a large pot.
- Cover with water and add a pinch of salt.
- Bring to a boil and cook until the potatoes are fork-tender, about 15–20 minutes.
- Drain the potatoes and let them cool slightly.
Prepare the Potatoes:
- Arrange the boiled potatoes on the prepared baking sheet, leaving space between each potato.
- Using a potato masher or the back of a fork, gently smash each potato until it’s about half an inch thick.
Season and Oil:
- Brush the smashed potatoes generously with 3 tablespoons of olive oil.
- Sprinkle with salt and pepper to taste.
Bake the Potatoes:
- Place the baking sheet in the preheated oven.
- Bake for 25–30 minutes or until the potatoes are golden brown and crispy on the edges.
Toss with Buffalo Sauce:
- In a mixing bowl, add the ¼ cup buffalo sauce.
- Once the potatoes are roasted, carefully transfer them to the bowl.
- Gently toss the potatoes to coat them evenly with the buffalo sauce.
Garnish:
- Transfer the sauced potatoes to a serving platter.
- Sprinkle with 2 tablespoons chopped fresh chives, 2 tablespoons chopped scallions, and 1 tablespoon chopped fresh herbs (thyme or parsley).
Serve:
- Serve immediately with crumbled blue cheese sprinkled on top or with ranch dressing on the side for dipping.
