Buffalo Feta Elote Corn

Buffalo Elote-Style Corn takes the Mexican street corn classic and gives it a fiery American spin. Grilled corn is slathered in butter, coated with elote seasoning, and finished with buffalo sauce, crumbled feta, and fresh herbs. The result is smoky, spicy, creamy, and tangy — a perfect side dish for barbecues, game days, or anytime you’re craving something bold.

Equipment

  • Grill (or grill pan)
  • Basting Brush
  • Knife & Cutting Board
  • Mixing Spoon

Ingredients
  

Corn

  • 4 ears corn husks removed

Spices & Seasonings

  • 2 tsp elote seasoning
  • 1 tsp garlic powder to taste
  • ½ tsp salt & pepper to taste

Toppings

  • 4 tbsp buffalo sauce
  • ½ cup feta cheese crumbled (or vegan feta)
  • ¼ cup chives chopped
  • ¼ cup parsley chopped
  • 4 tbsp unsalted butter softened

Instructions
 

Grill the Corn

  • Preheat grill to medium-high heat. Place corn directly on the grill, turning occasionally, until lightly charred and cooked through, about 10 minutes.

Season & Butter

  • Brush hot corn with softened butter. Sprinkle evenly with elote seasoning, garlic powder, salt, and pepper.

Add Buffalo Kick

  • Drizzle buffalo sauce over each ear of corn.

Finish with Toppings

  • Sprinkle with crumbled feta, fresh chives, and parsley. Serve immediately while warm.
