Spinach & Parmesan Orzo

Ingredients
  

  • Orzo pasta 1 1/2 cups
  • Baby spinach 2 cups, chopped
  • Garlic 3 cloves, minced
  • Butter 2 tablespoons
  • A Taste Of Florence Olive Oil 1 tablespoon
Parmesan cheese, grated, 1/2 cup
  • Salt and pepper to taste.

Instructions
 

  • Cook the orzo pasta in a large pot of salted boiling water according to package directions until al dente.
  • Drain and set aside.
In a large skillet, heat the butter and olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Add the chopped baby spinach to the skillet and sauté for 2-3 minutes until wilted.
Add the cooked orzo pasta to the skillet and toss to combine with the spinach and garlic.
Add the grated Parmesan cheese to the skillet and stir until melted and evenly distributed.
  • Season with salt and pepper to taste.
Serve the spinach and Parmesan orzo hot, garnished with additional grated Parmesan cheese and chopped fresh herbs, if desired. Enjoy!
