Soy Chorizo Vegan Chili

Ingredients:

  • Olive oil: 1 tablespoon
  • Onion: 1 large, diced
  • Garlic: 3 cloves, minced
  • Red bell pepper: 1, diced
  • Green bell pepper: 1, diced
  • Carrot: 1, diced
  • Celery stalk: 1, diced
  • Soy chorizo: 1 package (12 oz) (make sure it’s vegan, Trader Joe’s has a good one)
  • Black beans: 1 can (15 oz), drained and rinsed
  • Kidney beans: 1 can (15 oz), drained and rinsed
  • Pinto Beans: 1 can (15 oz), drained and rinsed
  • Diced tomatoes: 1 can (15 oz)
  • Tomato paste: 1 can (6 oz)
  • Vegetable broth: 2 cups
  • Chili powder: 2 teaspoons (adjust to taste)
  • Ground cumin: 1 teaspoon
  • Smoked paprika: 1/2 teaspoon
  • Salt: 1 tablespoon, to taste
  • Black pepper: 1 tablespoon, to taste

Optional toppings:

  • Chopped chives
  • Chopped green onions
  • Sliced jalapeños
  • Vegan shredded cheese
  • Vegan sour cream
  • Pickled Red Onions
  • Avocado Lime Crema
  • Fresh cilantro
  • Lime wedges
  • Avocado slices

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, minced garlic, diced red bell pepper, diced green bell pepper, diced carrot, and diced celery. Sauté for about 5-7 minutes, or until the vegetables begin to soften.
  3. Stir in the salt, pepper, chili powder, ground cumin, and smoked paprika. Be sure to mix around every few minutes so nothing sticks to the bottom of the pot.
  4. Add the soy chorizo to the pot break with your hands before or break it up with a spatula in the pot. Cook for another 5-7 minutes, stirring occasionally, until it’s browned and fragrant.
  5. Add the diced tomatoes, tomato paste, drained and rinsed black beans, drained and rinsed kidney beans, and vegetable broth. Stir to combine everything.
  6. Bring the chili to a simmer, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes, stirring occasionally. If it becomes too thick, you can add a bit more vegetable broth.
  7. Taste the chili and season with salt and black pepper according to your preference. If you want more heat, you can also add a pinch of cayenne pepper.
  8. Serve the vegan chili hot with your choice of toppings, such as chopped green onions, sliced jalapeños, vegan shredded cheese, vegan sour cream, fresh cilantro, lime wedges, and avocado slices.
