Ingredients:

Falafels, cooked (4-6)

Mixed Greens (4 cups)

Shepherd Salad (1 cup)

Toasted Pita, cut into triangles (1/2 pita)

Roasted Butternut Squash Crinkle Cuts (1 cup)

Roasted Zucchini, sliced (1/2 cup)

Feta Cheese Crumbles (1/4 cup)

Hummus (1/4 cup)
-
Tzatziki (1/4 cup)

Lemon Dijon Vinaigrette (2 tbsp)
Instructions:

Arrange the mixed greens on two plates.

Add the Shepherd salad on top of the mixed greens.

Place the cooked falafels on top of the Shepherd salad.

Add the roasted butternut squash crinkle cuts and roasted zucchini to the plates.

Sprinkle the feta cheese crumbles over the top of the salad.

Add the toasted pita triangles to the plates.

Spoon the hummus and tzatziki on top of the salad.

Drizzle the lemon Dijon vinaigrette over the top of the salad.
