  • 1 can Green Chile Peppers
  • 8 Soft Tortillas
  • 1 cup Tortilla Chips

The Produce:

  • 4 cups Shredded Romaine Lettuce
  • 1 cup Diced Cherry Tomatoes
  • 1 Red Bell Pepper sliced
  • 1 Yellow Onion sliced
  • ½ cup Sliced Mini Bell Peppers
  • 1 cup Corn
  • 2 Jalapeños sliced
  • ½ cup Fresh Cilantro chopped

The Creamy and Zesty Finishes:

  • 2 cups Shredded Cheddar Cheese
  • 1 cup Guacamole
  • ½ cup Sour Cream
  • ½ cup Enchilada Sauce
  • 2 Lime Wedges
  • ½ cup Sliced Black Olives
  • Hot Sauce such as Frank’s Red Hot

Instructions
 

Sauté the Aromatics and Protein:

  • Heat a large skillet over medium-high heat and cook the soy chorizo or ground beef with the sliced onions and red bell peppers for 8–10 minutes. Sauté until the meat is fully browned and the vegetables are tender with slightly charred, caramelized edges, ensuring a deep savory foundation for the tacos.

Warm and Infuse:

  • In a separate small saucepan or microwave-safe bowl, combine the spicy black beans, corn, and green chiles. Heat on medium for 4–5 minutes until bubbling and fragrant, which allows the heat from the chiles to fully permeate the beans and corn for a cohesive flavor profile.

Prepare the Fresh Elements:

  • While the proteins cook, arrange the shredded romaine, diced tomatoes, mini bell peppers, and sliced jalapeños into small individual bowls or designated sections of your board. This step ensures the “cold” elements stay crisp and refreshing, providing a sharp textural contrast to the warm fillings.

Assemble and Balance:

  • Place the warm tortillas in a clean kitchen towel to stay pliable and set them in the center of the board surrounded by the cheese, olives, and cilantro.
