Ingredients:

Kale, chopped and stemmed, 3 cups

A Taste of Florence Olive Oil- 1 tbsp

Honey crisp apple, diced, 1/2 cup

Dried cranberries, 1/4 cup

Honey-roasted almonds, thinly sliced, 1/4 cup

Feta or goat cheese, crumbled, 1/4 cup

Salt and pepper, to taste

Creamy apple cider vinaigrette
Instructions:

In a large mixing bowl, add the chopped kale and a pinch of salt.

Drizzle kale with the oil or a lemon drizzle & massage the kale with your hands until it becomes tender and wilted, about 3-5 minutes.

Add the diced honey crisp apple, dried cranberries, thinly sliced honey-roasted almonds, and crumbled feta or goat cheese to the mixing bowl.

Toss all the ingredients together until well combined.

Add salt and pepper to taste.

Drizzle the creamy apple cider vinaigrette over the top of the salad.

Toss again until everything is well coated.

Divide the salad between two plates and serve immediately.
