Ingredients:

Gluten-free, multi-grain or sourdough bread, 2 slices

Heirloom tomatoes, 2 slices

Vegan mayo, 2 tablespoons

Salt- pinch of each/to taste

Pepper- Pinch of each/to taste.

Olive oil, 1 tablespoon
-
Red wine vinegar, 1 teaspoon

Kettle cooked salt & vinegar chips, crumbled as desired- 1/4 cup

Parchment paper or tin foil
Instructions:

Toast two slices of gluten-free bread until golden brown.

Spread 1 tablespoon of vegan mayo on each slice of bread.

Slice two heirloom tomatoes and place them on one slice of bread.

Drizzle the tomato slices with 1 tablespoon of olive oil and 1 teaspoon of red wine vinegar.

Sprinkle salt and pepper on the tomatoes to taste.

Crumble the desired amount of kettle cooked salt & vinegar chips and sprinkle them over the tomato slices.

Add another layer of crumbled chips on top of the tomato slices.

Cover the sandwich with the other slice of bread and press down gently.

Place the sandwich on a piece of parchment paper or tin foil.

Wrap the parchment paper or tin foil tightly around the sandwich to secure it.

Cut the sandwich in half, if desired, and serve.
Nic’s Notes:
-If you’re brining this on the go- its best to add the chips and the red wine vinegar later on, right before you eat it so it does not get soggy.

I only officially went vegetarian a year and a half ago, but I always was very picky with meats as a kid and growing up this was my favorite sandwich to bring to the beach and my siblings would always make fun of me for it since its pretty much just tomatoes, while they would be having deli meat loaded sandwiches.
I promise if you use some high quality ripe heirloom tomatoes this is such a simple a delicious sandwich that will have you coming back for more. I hope you guys enjoy it as much as I do 🙂
-For delicious heirloom tomatoes always check out your local farmer’s market the first choice. My second choice is always H-Mart. They have the best veggie selection and pretty much always have juicy ripe heirloom tomatoes even in the winter months. They can be pricey, going for around $5.99/lb but are soooo worth it to splurge on occasionally to make something like this or just thinly slice them up and drizzle with some of our A Taste of Florence Olive Oil salt & pepper and it is just perfection!
