Creamy Balsamic Orzo Salad

Serves 4-6

Ingredients:

  • Orzo pasta, 1 pound

  • Black olives, pitted and diced, 1 cup

  • Roasted red peppers, diced, 1 cup

  • Cherry tomatoes, halved, 1 cup

  • Cucumbers, diced, 1 cup

  • Feta cheese, crumbled, 1 cup

  • Fresh parsley, chopped, 1/4 cup

  • Dried oregano, 1 teaspoon

  • Garlic powder, 1/2 teaspoon

  • Salt, 1/2 teaspoon

  • Black pepper, 1/4 teaspoon

  • Creamy balsamic dressing, 1/4 cup

Instructions:

  1. Cook the orzo pasta according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process.

  2. In a large mixing bowl, combine the cooked and cooled orzo pasta, black olives, roasted red peppers, cherry tomatoes, cucumbers, and crumbled feta cheese.

  3. Add fresh parsley, dried oregano, garlic powder, salt, and black pepper to the mixing bowl and toss until all ingredients are well combined.

  4. Pour the creamy balsamic dressing over the orzo pasta salad and toss until everything is well coated.

  5. Cover the mixing bowl with plastic wrap and refrigerate the orzo pasta salad for at least 30 minutes before serving.

  6. Serve the orzo pasta salad chilled and enjoy!
