Ripe avocado, 1

Pickled red onion, thinly sliced, 1/4 cup

Instructions:

Start by toasting your gluten-free bread to your desired level of crispiness.

Cut the ripe avocado in half and remove the pit.

Use a spoon to carefully scoop out the avocado flesh in one piece.

Starting at one end of the avocado half, use a sharp knife to make thin slices without cutting all the way through to the skin.

Place the avocado rose on top of each slice of toasted bread.

Arrange the pickled red onion slices around the avocado in a rose shape.

Sprinkle crumbled feta cheese over the top of the toast.

Drizzle balsamic glaze over the top of the feta cheese.

Season the toast with salt and freshly ground black pepper to taste.
